Turkey Burgers, adapted from “The Whole Food Bible”
Serves 4-6, or makes one loaf
This recipe can be used for burgers or cooked in a loaf pan like a traditional-style meat loaf.
Ingredients
1 1/2 pounds ground organic free-range turkey
1/4 cup minced onion
3/4 cups coarsely ground oatmeal (put oatmeal in blender and pulse until the oatmeal is the consistency of bread crumbs)
1 egg
1/4 cup minced celery
1/4 cup milk, soy milk, or stock
1 tsp. sea salt
1 minced garlic clove
3 Tbsp. chopped fresh parsley
Preheat oven to 350°F.
Mix all the ingredients well.
Form into 1-inch thick patties and place in a lightly oiled skillet.
Cook the burgers over medium heat for about 5 minutes, or until browned and crispy.
Flip the burgers carefully and cook for 5 minutes longer, or until golden brown and a thermometer inserted in the center registers 165°F and the meat is no longer pink.
Serve the burgers hot.
If making a loaf, form into a loaf and pack into a lightly oiled 8x4-inch baking pan.
Bake for approximately 45 minutes or until the loaf begins to pull away from the pan.
Grilled Trout, adapted from “The Perricone Promise”
Serves 2
Ingredients
1/4 cup extra-virgin olive oil
Juice of 2 fresh lemons—about 1/4 cup
2 Tbsp. chopped fresh basil, thyme, parsley and rosemary
2 tsp. grated lemon peel—use organic lemons
2 garlic cloves, minced
2 6–8-oz. trout fillets
Combine olive oil, lemon juice, chopped herbs, lemon peel and garlic in saucepan.
Gently whisk over low to medium heat until mixture is blended.
Brush the flesh side of the trout with the oil/lemon/herb mixture.
Add salt and freshly ground pepper to taste.
Grill over medium heat, flesh side down until lightly brown, about one and a half minutes.
Turn over and brush with more of the oil/lemon/herb mixture.
Grill until thoroughly cooked about two minutes, depending on thickness of fillet.
Remove fillets to plates, skin side down.
Heat remaining oil/lemon/herb mixture and drizzle over fish.
Serve with fresh lemon wedges.
